Tonight's Dinner: April 16, 2012

After a long drive from San Diego home, we wanted to grill something up since it's simple and fairly light.  We had a TON of awesome food over the weekend and were bent on having something light and relatively plain.  Of course we didn't have any food in the house so I ran over to Costco and Grocery Outlet to pick up some groceries.  While at the wedding we had an awesome butter lettuce wedge salad with blue cheese dressing.  I'm not a big fan of blue cheese, but it wasn't half bad.  For our dressing, I used a garlic-herb goat cheese instead since that is what I had on hand.  It turned out deliciously.

Garlic-Herb Goat Cheese Dressing 
3 tbsp garlic-herb goat cheese
3 tbsp light sour cream
2 tbsp milk
1 tbsp garlic; finely minced
salt and pepper to taste 
Directions: 
Wisk all ingredients together.  Add more milk to achieve desired consistency.

That salad looks soooooooooooooooo good. But what isn't good with goat cheese on it?!
