Tonight's Dinner: July 10, 2012

Tonight after my run and short swim I made baked shells.  I've had this on my schedule to make since last week, but it kept getting pushed back because of 4th of July and laziness.  This dish was very tasty, but not a great weeknight meal.  I like to grate my own cheese, so I first had to start with grating up a giant block of mozzarella. That seemed to take forever since the block was about the length of my arm and I was using my Magic Bullet.  I cannot wait to get a food processor or even a Kitchen Aid attachment.  I had to cut up the cheese into small blocks and then grind them.  It's easier than using a block grater, but still a lot of work.  After mixing all the ingredients in the ziplock for easy clean up, I finally got around to actually stuffing the shells.  They turned out really well, but I think it's more of a weekend dish for the sheer amount of work that I had to put into it.  I would have cut my time in half if I just bought preshredded cheese, but it tastes so much better when you shred it yourself.
