Tonight's Dinner: July 12, 2012

After 4th of July I had a ton of chicken breasts left over.  Last weekend I boiled them up and froze them in small packets for lazy day chicken-a-la-king.  Tonight was a lazy day.  I wanted to go for a run and swim so I quickly chopped up the chicken, red bell peppers, and threw them into a pot with cream of chicken soup and a little bit of chicken stock.  Wa-la!  Chicken-a-la-king in 10 minutes.  While I was out, Nick made some rice and dinner was ready to serve by the time I got back.  It was a simple, but delicious meal.

We added spinach for some extra texture and nutrients.
