Tonight I headed over to Sprouts to pick up a few things for dinner and muffins. I wanted to use up the pumpkin before it went bad, so I stocked up on whole wheat flour to make muffins. I used the Downeast Main Pumpkin Bread recipe that I found on Allrecipes.com. A lot of times I veer off from recipes, but the bread got around 5,200 good reviews so I didn't want to change anything. It did call for all-purpose flour, which I substituted out for whole wheat, but I don't think it changed it that much. The muffins turned out really well. Even I liked them! The recipe says that it makes three loaves, but I did it in muffin tins for ease of eating for my coworkers.
I also roasted chicken and cauliflower. Once the cauliflower was done, we poured it into a pot and made a soup with cream and turkey stock. It turned out really well. We paired it with No-My-Fawn that my grandma made.
