Tonight's Dinner: June 4, 2013

Congratulations to me!  I'm finally caught up.  It was quite a feat with the crazy schedule that we've had.  It's now Thursday, but the last two nights I've been eating ramen, which isn't really anything to write home about.  Tuesday night, however, I did make us a good dinner.  After having the Fongs over, we had half a bottle of Cline wine left over.  I've been trying really hard to be healthy and not have my wine or beer at the end of the day.  Instead of drinking it, I cooked with it.  I made drunken chicken and then used the excess wine to make a tasty pasta sauce.  I just couldn't bear the thought of pouring out the wine, so pasta sauce was an easy answer.  I was planning on having the chicken with our left over quinoa, but utilizing my wine was more important.  Old habits die hard.

Looks kind of strange, huh?  I slow boiled two chicken
breasts in half a bottle of wine.  They actually turned out
to be pretty juicy.

This makes me happy.  It means that we're back to cooking
