Tonight's Dinner: May 28, 2013

Tonight my plan was to make a pseudo Thanksgiving dinner with turkey cutlets that I had defrosted.  I know, I've been defrosting a lot of stuff lately, but for a couple of weeks I was doing my regular grocery shopping, but we were so busy that I wasn't able to make dinner.  Things are just that busy around here.  Anyway, knowing that the turkey cutlets would be dry since they were white meat and cut thinly, I practically poached them in chicken stock seasoned with thyme.  I also made garlic mashed potatoes and sauteed zucchini.  The turkey turned out surprisingly well and I was able to make a gravy from the excess chicken stock.
