Tonight's Dinner: March 31, 2014

I got about three hours of sleep and was not even sure how I was still functional by dinner time.  I had coffee at noon on Sunday, which kept me up all night.  We were also short staffed at work, which is always hectic in general, but even worse for a Monday.  So by the time I got home, I wanted to make something really simple.  We had Chicken-a-la-king because all I had to do was boil the chicken and then mix it with cream of mushroom.  My mom usually uses pimentos, but I used diced red bell pepper because that is what I had on hand.
