Tonight's Dinner: November 14, 2012
After going for a nice long run, which I'm extremely proud of, I decided to cook up the chicken that I had defrosted in the fridge. It was literally a fridge clean out since we're going away for the weekend to watch Formula 1 in Texas. I threw two potatoes in the mircrowave to "bake". It just takes way too long to do them in the oven when the microwave works just fine. I browned up the chicken and then made a sauce of sauteed onions, left over chicken cacciatore sauce, the remains of roasted vegetables, and coconut milk. It was an odd mixture. I was worried about how the coconut milk would mix with the cacciatore, but it turned out pretty well and was quite tasty.
