Tonight's Dinner: October 21, 2012

To finish off my very productive day, Nick and I put together a chicken enchilada casserole with the full tray of left over chicken strips.  The recipe was pretty good, but it was super heavy.  If I do it again I will use a canned enchilada sauce or make my own mole.  The sauce from the recipe didn't have enough umpf and was way too creamy for our tastes.

I'm trying to figure out ways to repurpose all of these strips.  Tonight we'll be having chicken Parmesan.  We still have 3/4 of the tray left.  We're going to be so chicken stripped out by the end of the week, but it's fun trying to figure out different ways to eat them.
